Masseria Faraone | the making of home made Apricots preserves


The end of june is here and our Apricots tree has been gifting us with colorful and absolutely delicious fruits. There are probably a thousand ways to preserve fruits for the cold autumn and winter months, but i am guessing that home made Apricot jam is one of the simplest and long lasting methods you can do quiet easily.

On a hot afternoon last week, my mom and I decided to go out in the gardens of Masseria Faraone with two big wooden crates and start the fruit harvest.

After harvesting an abundance of Apricots, we took them inside to get them a fresh rinse in cold water.

The process of making Apricots jam is quiet simple, you simply start by cutting the fruit through the middle and taking out the seed from the inside. After that, you put all the Apricots in a big pot and start cooking on slow flame. Add the right amount of sugar and lemon juice and continue to stir (gently and calmly) until the sugar dissolves (exact quantities are noted below!)

I mention stirring the apricot mixture in a gently way as the jam will be preserved in small jars for a long time, and so in order to avoid air bubbles which will simply ruin the jam, you must calmly stir throughout the entire cooking process.

Also make sure you take away all the skim foam with a spoon throughout the cooking. While the apricot mixture is cooking, you can start preparing the preserve jars and lids by boiling them in hot water

After the apricot mixture has reached a thick texture the preserve is ready to be placed in the jars.

After filling the jars, run a thing spoon inside the jar to remove any air bubbles.

Close the lids and turn the jars upside down to allow the jam to press to the bottom of the lids.

Place the filled jars into hot boiling water and leave them to boil for 15 minutes.

After the 15 minutes have passed, you can place the apricot preserve jars onto a wooden plate and leave them to cool.

6kg of Apricots

2kg of Sugar

3 Lemons (pressed juice)

1 spoon of Vanilla Sugar

500 grams of Sugar

1 Lemon (pressed juice)

1/3 spoon of Vanilla Sugar
